Arakas kokkinistos or Greek Style peas is the perfect dish for a cold day. This dish is absolutely delicious.
2tbsp olive oil
1 largebrown oniondiced
Salt & Pepper
In a large pot, add two tablespoons of olive oil. When the pot is hot, add in the lamb cutlets.
Once the lamb has gotten a nice golden colour, add in the diced onions and the sliced carrots. Cook for roughly 2-3 minutes, or until the onions have softened. Afterwards, add in the tomato paste and the fresh dill.
Cook the tomato paste for 2 mins, then add the diced tomatoes and the water.
Cover the pot with a lid and cook for 1 hour on a medium heat.
After an hour remove the lid, if there is still too much liquid or the peas aren't soft... set the heat to high and cook for another 15 - 20 minutes until the sauce has thickened.
Remove from the heat and serve with some mashed potatoes or with some crusty bread and some Greek Feta Cheese.

You can half the cooking time of this recipe by using a pressure cooker. When I make this recipe at home I use a pressure cooker and I totally recommend it, as it saves so much time.
