Honey Balsamic Chicken weekly lunches


Something different for lunches this week.

I haven’t posted anything for a while now and I thought I’d share this week’s meal-prep. This week, we wanted to try something different. So we decided to do something completely different. Normally my meal-prep recipes are Asian-style cuisine. Today, we mixed it up and made Honey Balsamic Chicken instead. This chicken is sweet and savoury, and absolutely delicious.  We also swapped out the rice and replaced it with some roasted sweet potatoes and stir-fried veggies instead.

We didn’t really follow a recipe while putting together this dish, so I didn’t take many photos as I didn’t expect to post this recipe, but I’m very happy with how it all turned out, so I decided to post it anyway. Next time I make this dish (which I will, because it’s absolutely delicious) I will make sure to take photos.

Honey Balsamic Chicken with roasted sweet potatoes and stir fried beans.

A super delicious and healthy lunch or dinner.

Honey Balsamic Chicken

  • 4 chicken breasts butterflied
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp chilli flakes
  • salt & pepper

Roasted Sweet Potatoes

  • 3 sweet potatoes cut into cubes
  • 1 tbbsp olive oil
  • 1 clove garlic minced
  • salt & pepper

Stir-fried Beans

  • 500 g beans
  • 1 tbsp sesame oil
  • ½ tsp chilli flakes
  • 2 tbsp soy sauce
  • 1 tsp sesame seeds
  • 2 cloves garlic


Honey Balsamic Vinegar

  • Begin this recipe by evenly slicing your chicken breasts. Once sliced, add chicken into a large bowl.
  • Combine the chicken with all the marinade ingredients and set aside. Let the chicken marinate while you prepare the other ingredients.
  • Once the potatoes are in the oven and the beans are cooked, you can begin cooking your chicken. In a hot pan, drizzle some oil and cook the chicken. Make sure not to overcrowd the pan.
  • Cook chicken for roughly 5 minutes on both sides. (cooking time will vary based on the thickness of your chicken)

Roasted Sweet Potatoes

  • Peel and chop sweet potatoes into bite sized chunks.
  • Place on a baking tray (lined with baking paper or aluminium foil) and drizzle olive oil. Season with salt and pepper and add crushed garlic.
  • Cook in a pre-heated oven at 250°c for 30 minutes.

Stir-fried beans

  • Clean the beans and chop both ends off.
  • Bring pan to a high temperature. Once the pan is hot, add sesame oil and the minced garlic. Then add the beans and stir fry.
  • Season beans with some salt, chilli flakes, then add some sesame seeds. Cook until the beans become slightly tender.


For juicier chicken, replace breasts for chicken thighs.


This dish is perfect for anyone who is trying maintain healthy eating habits throughout the week. It has honey balsamic chicken (protein), stir-fried beans and roasted sweet potatoes (veggies, also high in potassium). There is nothing unhealthy in this dish. If you are watching your weight, this dish would be perfect for you. If you’re not a fan of sweet potatoes, you can substitute the potatoes with some brown rice instead.
